Travel through Mexico without leaving downtown Dallas with Ruta de México at Luna Roja, a four-week culinary experience celebrating the flavors, traditions, and stories of four distinct regions of Mexico.

Each week, Chef Michael Lopez and the Luna Roja team will feature a special regional entrée paired with a cocktail inspired by the same destination. From the rich mole and mezcal traditions of Oaxaca to the coastal flavors of Baja, the Mayan influences of the Yucatán, and the tequila heritage of Jalisco, every stop offers something new to discover.

The Journey

Week 1 — Oaxaca | Midnight in Oaxaca

Slow-braised short rib with mole negro, roasted poblano-corn purée, crispy potatoes, charred vegetables, pickled onion, and warm tortillas.

Featured Cocktail: Oaxaca Old Fashioned with mezcal, reposado tequila, agave, mole bitters, and orange.

Week 2 — Baja California | Baja Pacífico

Seared market fish with chile-lime shrimp, cilantro rice, roasted corn esquites, avocado crema, salsa verde, cabbage, and fresh lime.

Featured Cocktail: Baja Sunset with blanco tequila, grapefruit, lime, agave, soda, and chile salt.

Week 3 — Yucatán | Fuego Maya

Slow-roasted achiote citrus pork with cilantro rice, seasoned black beans, roasted plantain, habanero-pickled onions, avocado crema, and warm tortillas.

Featured Cocktail: Mayan Heat with reposado tequila, pineapple, lime, agave, habanero, and Tajín.

Week 4 — Jalisco | Jalisco Carne Asada

Grilled carne asada with roasted poblano rajas, caramelized onions, chile-lime potatoes, charred corn, avocado, queso fresco, salsa roja, and reposado chile glaze.

Featured Cocktail: Jalisco Especial with reposado tequila, orange liqueur, fresh citrus, agave, and smoked chile salt.
