Transitioning from his role as Sous Chef at Kessaku and Monarch in Dallas, Larson brings his refined culinary perspective to Luna Roja, overseeing all aspects of kitchen operations, including menu development, inventory management, staff training and special event programming. Throughout his career, Larson has held leadership roles across the Dallas area, including Chef de Cuisine at Primos MX Kitchen and Chef/Manager at The Italian Job. In these positions, he refined recipes, implemented operational standards and led teams through openings and evolving service models, grounded in a focus on consistency, efficiency and exceptional guest experience.
Known for his collaborative leadership style, Larson is committed to mentoring and developing talent, regularly leading training programs for both back and front-of-house teams. His expertise spans menu planning, cost control and building systems that support both culinary creativity and business performance.
